Does anyone know if there is a way to run a report to see all the activity for a specific tech. I'm looking for information like assets details and such they might have changed.

You should be able to used the Advanced Search within the Assets section to specify if the History > Action or Tech matches to the technician name, with a condition to filter the date to the specified time range you're looking for.
Note that this may take some time to search and could result in your help desk slowing down during busy working hours if there's not enough resources for the help desk to use.
