What do you mean by name of transaction? Name of transaction consists of name of recording + where it is monitored from. So for example "www.google.com from player X", this format can't be change, but you can change name of recording.

Yes, you are correct. This is not supported change, I would definitely contact support ask for advice and also raise a feature request.

This feature is available in new release 15.1.0.

Maybe I'm wrong, but in General TLS should not be the only way to connect to Office 365 as many users are using it not and WHD does not support TLS. However it is something we would like to introduce in future releases.
