you can always build a new one with the fields you want by navigating to the service desk> service catalog and clicking on the plus button to your top right. you input fields you would want and build a process behind it. Let me know if you have any worries concerning that

It is possible to filter tickets. However, I don't think its possible to see tickets worked on just for a particular day. unfortunately, you will have to recreate these roles. I do not think there is a copy and paste option to move configurations within tenants.

I think this is a fixed thing... it is not possible to add or edit that header bar. you could submit this as a feature request.
