Are there certain Characters we should not use in our SNMP strings, or length? We run a script to generate our strings and we had an issue with one not working, we tested with just an easy one and it all worked.

I don't believe there are any hard coded limitation in SNMP communities per the RFC's, but it depends on the box and potentially your network management systems.
I think Cisco boxes, at least some of them, have a length limitation of 30 characters.
I would avoid @ (used sometimes to delineate VLANs in SNMP community strings).
I would also avoid * and $, but I don't think they're forbidden or anything...
