The most basic question...

Ive just had what seemed to be a really basic request come in:

Someone needs to see what bandwidth a specific host used between 1pm and 2pm last Friday.

I figured it was just a case of selecting the hosts switchport interface (in NTA) and setting an Absolute Time Period accordingly.

Alas, it's clearly not that easy.

So, would someone kindly tell me how I can do this? (apologies in advance for the completely basic question).

Find the IP of the host and do a Search by IP Address from the NetFlow Summary page.

you try doing that when you want to look at a specific hour during last friday...

Yes - the hourly data points are not held that long. You can see what the user was doing but not to the hour level. I can ping the PM with a feature request if this is important to have.
