We have a server team. Each individual is responsible for a portion of 200+ servers. Is there a way to set unique SMTP settings per node within Network Monitor? The value of the information goes down when all server managers get all alerts for all systems.

Not within the Network Monitor in the Engineer's Edition.
The Network Performance Monitor in the Engineer's Edition has this capability.
You should also take a look at the Orion Network Performance Monitor.
