I voted multiple cloud, but we are on premise as well. Eventually....everything possible will be in a cloud.
For added paranoia with a dash of security, we inherited an on prem network of infrastructure for storage and containers of db functionality. In the future, as security and protect modernizes, we will be shifting more to the cloud-based Operational Tech solutions.
