I just setup the evaluation of LEM and I can't figure out how to turn off the simulated test traffic?

What version of the LEM Console are you running?
If you are using the 5.3 evaluation Console, see: Stopping the Data Simulator in a LEM Evaluation Console.
If you are using the 5.3.1 (latest) evaluation Console, you should have a Stop button on the Data Simulator widget:

I believe I am on the latest version because I have the data simulator; however, I have turned everything off on that yet the data continues to flow in.
That's interesting because that resembles a bug that we had in the data simulator in the 5.3 Console. If you don't mind, double-check the version by clicking the logo in the upper-left, and then try the steps outlined in the KB linked above. If you're on 5.3.1 and you're having that problem, that's something I'll have to report to Dev. In either case, hopefully the workaround in the KB will work for you. If it doesn't, we can get a Sales Engineer involved.

So, is it possible to add my own nodes? I have a node that I want to send Syslog traffic from into LEM. I don't see the ability to add that node in LEM.
Think of adding nodes as an outside-in sort of process. You will either install a LEM Agent on a computer (server, workstation, etc.), or you'll configure some other sort of device to log to the LEM appliance (a firewall, for example).
If you let me know what you have in mind, I will probably be able to link you to some instructions.
I want to be able to forward Syslog data to LEM from any syslog enabled device such as a network device or Linux server.
