In our environment particular development and production we use different service accounts. Is there an ability to assign credentials specifically to each vcenter polled? Note my eyeballs might just be missing it.
If you log into the VMAN console and select setup and navigate to the Credentials menu you should be able to add as many as you need.
Ed is correct you can enter multiple credentials for vSphere and Hyper-V under setup - credentials
I think what is being looked for is how VMan uses those credentials when there are multiple VCenters and multiple credential sets. Does it just throw the list of credentials at each VCenter until one works? Is there a way to specify that account 'A' should only be used for VCenter 'A'? I stumbled across this looking for the same thing essentially. So far can't find an explanation of how VMan manages those credentials in such an instance. Thanks all!

VMAN appliance takes credentials one by one until first successful login to vCenter. So I would recommend that you create unique credentials for each vCenter.
Or there's a way how to assign credentials to vCenter(s). If you integrate VMAN with VIM (Orion), in Configuration Wizard you can choose which credentials will be used in VMAN in case of conflict between Orion and VMAN:
This will force VMAN to use credentials you already assigned to a vCenter / Hyper-V server in Orion.
