Hi,
I am looking to move all data(node history data and network maps etc.) from an evaluation installation of Orion v8 to a fully licensed copy.
Is there a set procedure that I can follow to do this?

Undermost circumstaces you can reattach the database, after downloading the full version, however I am not sure.

You can just install over your existing installation and all your settings will be preserved. If you are looking to move servers it's a little more complicated but not very difficult. If that's what you’re looking to do let me know and I'll give you some guidance.
