What is the correct method of adding interface descriptions to existing items without loosing historical data ?

We typically add the interface description to the interface on the router or switch, which updates the name via SNMP.
Makes it cleaner, since the names are the same on both Solarwinds and network device.

Right-click on the interface and select Interface Details.  Update that.
