This was a feature I enjoyed about solar winds NPM when I first saw it in an IT departments IT area many years ago at a hospital. How do I get this setup for specific interfaces?

Just add them into the Interface view. If you like on the edit button, you can change the look of these dials.
To add to what superfly99 replied, if you need to see this gauges for multiple interfaces in a Summary view, simply add 'Custom Object Resource's to your view. You can then edit the Custom object view to choose your interface.
