The SMTP server settings are defined per alert. Create a new alert, or open an existing one in the System Manager and go to the "Actions" tab. Select "Email/Page Action" and then go to the "SMTP Server" tab.

Your question is VERY vague. Are you looking to configure SNMP (Simple Network Management Protocol) for pulling statistical data such as CPU, Network TX/RX information, or do you want to know how to configure SMTP (Simple Mail Transfer Protocol) for sending email notifications from your Orion server?
