current percent utilization

I am new to Solarwinds and just started monitoring our network. I have just one question so far. One of our servers is showing the current percent utilization jumping between 40 and sometines over 100%. Can anyone explain to me what exactly does current percent utilization mean, and any reasons why this would be happening?
