I have a requirement to limit a particular team to be able to view stats on all SAN ports and a few key ethernet ports. Is it possible to set this up without having to individually select all the required ports?

yes, you can combine different limitation types for each account like Interface Name Pattern or Interface Type. So if there are unique attributes which specify your ports then you should be able to create proper limitation.
