Has anyone setup Alert Acknowledge in SAM using a Mobile device? If so, can you offer some help?
I'm interested in enabling our team to receive and respond to alerts during non-business hours.

You could make the web console accessible from outside your intranet via a web server and then use your phone's web browser to login & acknowledge the alert: Benefits of Additional Web Server
If you are using azure AD it can be set up to run orion through their web proxy, i have one client who did so and it was very easy to use once they figured it out.
