I'm not sure if I dreamt this, but we have a Orion server polling 100's of devices, the NIC is a dual NIC teamed to a single IP, is it best to keep it this way or use a single nic to poll (read this somewhere)?
Dual NIC is fine. The requirement is that Orion has 1 dedicated NIC (not sharing the load w/ other services. Polling a device withteamed NICs is problematic.

We are using dual NICs that are teamed into one. Seems to be working great for us. Both are Tx and Rx as one.
I forgot to mention using Dual NICS that teamed work great in Broadcom not so well with Intel NICS.
Yea, we were using Intel NICs and it seemed to cause the CPU and memory usage to jump so we broke up the team and now just use the one NIC.
