Can I monitor the amount of Physical memory a WIndows Service is using in Bytes?

I would like to monitor a Windows Service (IBM Director) and restart when this service (gatherer.exe) hits a particular size in MB's not in percent of memory used.

Yes, but this would need to be done by creating a component monitor for the process you want monitored using the "Browse for Component Monitors" wizard under [Settings -> SAM Settings] as pictured below. The fields available in the wizard correspond to the same fields seen in Task Manager on the right.

Yes, this can be done using the Advanced Alert Manager as pictured below.
