I am so glad this forum was created.    For a new Orion owner/administrator, this is a great addition. 

So - my question is this. When i am working with advanced alerts, i understand that I can use the "Time of Day" to limit when the mail goes out, but that is not granular enough.  for example, we have a few systems that reboot every Friday at 7am.  Except for that one time, I need to be monitoring these devices.  I was thinking we could use Alert suppression, but I dont see how to add the "if between 7am and 8am" portion.

How do you guys handle these types of things?

I've ran into this same issue.  Unfortunately, the time of day settings for advanced alerts are not very flexible as they only allow you to configure a single time range that applies to all selected days.  It would be helpful if you could set the time range for each day within one alert.  One way to work around this would be to create multiple copies of the same alert but with different time of day settings.  In your case you would need three different alerts.  One that covered all hours Saturday through Thursday.  Then you would need two alerts for Friday.  One that covered midnight to 6 a.m. and another that covered 8 a.m. to 11:59 p.m.
