How does a node know if there is an update required for an installed 3rd party app such as Adobe Acrobat Reader for example.
Will I need to first publish the package before a detection is made?

You will need to publish the third party update first, then approve it.
While checking for updates the node will review the approval, pre-requisite, applicability and install rules to decide if the update needs to be installed.
