Does anyone know if it's possible to maintain the warranty summary in SAM manually? Our system is on a closed network and not able to pull the info from our vendors.

Have you considered creating a node Custom Properties and entering warranty information there?
There is no mechnism in user interface to shift warranty date manually.
The only way i know is to change column [WarrantyDate] in table [dbo].[AssetInventory_ServerInformation].
