How can i tell what one of our dedicated vmnic's, used for vmotion, is reaching in terms of utilization?

One good way to do this is to use the performance analyzer and plot the network transmitted and received throughput for a host, and you can "drill down" into the transmitted or received throughput on a per NIC basis.
