I'm wondering how I can add this to IPmonitor for my Linux HP Proliant servers.

If you know the OID for the value you are wanting to capture (usually can find this through googling), you can simply specify this in the SNMP Monitor Wizard.
If you would like to see the HP Proliant MIB in an SNMP Tree (so you can walk the MIB), you'll need to send your Linux HP Proliant MIBs to technical support so they can compile and send you an updated ipMonitor MIB database.

I was able to create a list of all the MIBs under the enterprise tree, got the value but don't know to translate them to readable MIBs.

If you were able to get the OID value, you should be able to just insert this into the Custom SNMP monitor. Check box next to device you'd like to monitor, select Add > Add Monitor, and select Custom SNMP Monitor Wizard and enter your OID value. This will scan the device and retrieve the current value. This of course assumes that you have an enabled SNMP agent on your Linux HP Proliant server.
If you need additional assistance, your best bet is probably to open a ticket with technical support and they can help walk you through the entire process.
You'll need to load and run the HP Management Agents on your server.
