Yes, you can moniter expiration date.

If you have SAM, it already looks for certificates and expirations for IIS enabled-servers. (Example 1 / Example 2 / Report)

Could you help me with more detailed steps. Looks like the AppInsight for IIS is monitoring the SSL certificates only on very few servers though applied to many. Any help is appreicated.
