I'm trying to quickly dive into SAN storage growth reports including what vms are growing and in what datastores. Anyone have a good resource for getting me familiar with this "how too" process?

It looks like the Top-N: VM Storage Consumed is what you are looking for under the Storage Dashboard. It will list the VM, storage including snapshot size and the datastore it is located on.
