@dwaynek - Not sure on which version of SolarWinds Observability Self Hosted are you running on, but I think you do have an NCM template in SolarWinds for EXOS.

MY DASHBOARDS → NETWORK CONFIGURATION → Device Templates (Search for Extreme XOS)

I am assuming this is what you are looking for, if this doesn't work, you might have to create your own custom templates.
