Large and complex, while distributed and diverse
Day old and crusty...or maybe that's just the baker himself...
A bakery with a mix of old and new equipment from a variety of vendors spread across many different kitchens. Some suppliers no longer exist, some is redundant, it includes multiple single-site appliances, the whole kit and caboodle in want of upgrading and standardizing, and needing more kitchen staff.
We parachute in our chef, when other bakeries need help with their recopies!
Isolated and large.
Distributed but cookie cutter. Almost all of our locations are virtually identical from an infrastructure perspective.
