We had a network discovery running and it is monitoring unecesary resources that don't matter to us.
Is there a way to unmanage lets say CPU & Memory from all nodes at once?

Network discovery will just discovery the resources it not going to add them in monitoring.
To unmanage CPU & Memory from all nodes
You can go to Manage Poller and disable the Poller for CPU & Memory .

If I understand you it would disable this resource for alle nodes on the poller.
I want uncheck this resource on a couple hundred nodes at once.
Go To Node & Group Management than Manage Pollers
Find the Poller which is use for CPU & Memory and then disable them
