We have over a dozen VMWare hosts in vCenter. Many of the hosts have virtual servers that are intentionally left powered-down, either as templates or 'just in case'. How can I exclude these VM's from being included in the host's status?

Modify your vCenter service account and limit it's view to not see those VMs. Basic minimum permissions KB
Thanks Chad. There is no way to just enumerate all VM's on a host and then select which should be monitored?
Not from the SolarWinds end, it simply grabs all VM's the service account has visibility into. So to limit it, the vCenter account permissions for that service account have to be adjusted accordingly.
