Does anyone know of a way to ensure all nodes added to SAM have their volumes monitored, as aposed to going to each one individually and selecting the resource?
Yes through Discovery wizard (Network Discovery), you can run a recurring discovery on a regular basis and add volumes automatically, but then make sure your network selection is intact, you can always append to it as and when required.

Point 9 on the above link: make sure you select "Automatically monitor based on my monitoring"
Point 11 on the above link: set the frequency accordingly
If you have too many devices in your environment then watch out for performance and split your pulls accordingly, hope this helps.
