I am assuming you are talking about the standard High Availability email alert, Do you have SAM In your environment ? If you do we can easily create custom email alerts based on the services.

In that case you can monitor your Primary Poller and Standby Poller through an agent and apply 'Windows Service Monitor' for SolarWinds High Availability Service and customize your email alerts based on Component down alert.

I want to know how to recreate the default email that SolarWinds sends out when the HA pool member changes:
The only info that the email gives is:
email subject - HA Pool member instance status changed
email body -
Pool member: SolarWinds Server HostnamePrevious state: Up/Critical/DisabledNew state: Up/Critical/Disabled
I want to recreate the default so i can add more information.
