I really need to be able to modify some API templates en masse. The easiest way to do this is probably going to be exporting and modifying the template files. What's the best way to do this?

There are plenty of examples in the powershell samples folder https://github.com/solarwinds/OrionSDK/tree/master/Samples/PowerShell.
