I think you want to look at the Alert Suppression tab for the alert. This will allow you to have a condition looking at a different nodes stats and should suppress the alert if the mail sever is down. I had a client that wanted to do the same thing when CPU was running high, and we can look at the gauge and also set alerts, but couldn't make the node change colors.
