Well, VMware recommends no more than 72 hours, so I would think your 48 hour rule was built on top of that.

That's not what they are trying to build. Tesla wants to put batteries into homes and businesses in order to have the capacity to run for weeks and months if necessary. Architecting a power grid that could go offline with a few days of bad weather is about as silly as putting all your infrastructure into one AWS region.
