For vSphere those memory management approaches are almost the same from vSphere 4.1. Note also there is an overcommit approach as a first step (enabled by default, exept if you reseve the entire VM memory).

Which version of vSphere? v 5.1 before the U1 has a bug in this counter (notice also with VMware Operation Manager).

If you have vCenter Server you can use the Storage View tab and short by snapshot. Otherwise a nice tool to have good report of your enviroment is RVTools.

By default DRS does not change the ESXi host state. Only when you enable DPM this will happen.
