The short answer is yes you can, with Server & Application Monitor. The long answer is depending on what all you want to monitor, you may have to do some customization to collect the data or metrics you are looking for.

There are a number of ways this can be done, depending on the OS and mail application in question. At the most basic level, you can use a custom script monitor with SAM to collect the metric. See Component Monitor Types for a list of available component monitor types.

Regarding Flash content not working on Chrome, I use Chrome version 46.0 and Flash plugin version 19.0 with no issues when access the VMAN UI. You can definitely use WPM to check the the sites for availability and response time. If you wanted to dig deeper, you could write some PowerShell scripts to make direct calls to the public APIs and leverage those with the SAM PowerShell Component Monitor.

Have you validated that the network traffic required is capable between the servers/nodes in question?

I'd have to look in my environment, but I don't think it would be terribly uncommon for CPU to spike when playback is happening. The amount of information being processed during that period could have an impact.
