TCP/25 should be all you need open in order to send email from the NPM box. The Exchange server will also have to allow the NPM server to relay through it.

If you just need to get the data extracted from NCM, you could create a report in NCM with the fields you need and then export it to a text file of some sort.

I can't think of any good reason not to do this. I manage my syslog messages on a daily basis through this method.

You should be able to use the variable ${IP_Address} within your alert email to display the ip address of the node that the alert applies to. You can view the available variables in the admin guide at this link
