Without knowing how many component monitors will be configured it's hard to say for sure, but assuming default polling intervals and default retention settings with 6000 component monitors (assuming an average of 10 components per-server) the database should be around 18GB.

SAM doesn't really have any ability to monitor storage infrastructure components such as SANs. That is the exclusive domain of Storage Resource Monitor.

To the best of my knowledge Dell has made no changes that would allow SAM to monitor storage specific information via WMI. If you have spoken to Dell's support recently and have been told otherwise please let me know.
