The monitor I am looking for is a specific monitor in perfmon. If you go under the "Memory" performance object and select the "Free System Page Table Entries" counter, you can find that monitor. When typing in the message box, we get the random carriage returns. After typing in the message box, and then pasting the content into WordPad, we would see the random carriage returns just as we were seeing them in the emails.
