It's very strange behavior.
Can you expand "Show Email Header Information" option to see more information?
Also log files might be helpful in this case (Instructions for collecting Alert Central Logs)
Do you use some additional features, like signatures, in mail?
Can you reproduce this issue with some other mail client application (Outlook10, Thunderbird, Bat, etc)?

I have done some additional tests and here is my findings: we are observing same behaviour for any messages sent as "Plain Text". If I will send it as and HTML - then it all works. Tested on Outlook 2013 and Outlook 2010 as well. Below is a header. I can also attach log files if you will tell me where (I would like to do it in private if possible)
Yeah, it looks like misunderstanding of Content-Types.
Although you explicitly specify to send "text/plain" messages AlertCentral receive them with "text/html" Content-Type
Soon will be available new release version of AlertCentral where this Content-Type handling logic is more agile (basically we look at everything that "text/*")
And as for now you can change Outlook setting to set HTML option as default mail format.
I would like to take a closer look at your log files.
I can get more detailed information about mail processing if you append tracing level in log configuration for Polling, Parsing and Workflow modules:

- restart AlertCentral (so new changes can apply)
- create new mail from Outlook (to reproduce a bug)

This is very strange, but after changing logging level and restarting system it all works OK now. Maybe it just needed a restart, as I haven't done it since installation.
