Cisco 6500 switch monitoring

We're working on sizing our Orion monitoring implementation. We're focusing on our Cisco devices at the moment. Understanding that all networks vary, and setting the assumption that the environment is a single data center, multiple remote office enterprise with IPVPN WAN connections and Cisco switches, for a business environment that is not transactional (ie, optimal network performance is not a necessity; reliable, stable network performance is) with common, Windows-based applications and unexceptional internet traffic, I have two questions:

1) What are the minimum elements recommended to monitor for Cisco ASAs, switches and routers?

2) Under what circumstances would one choose to monitor all interfaces?
