Easy way to change SMTP server?

Is there an easy way to change your SMTP server address? We have implemented an SMTP relay and it is cumbersome to go into each and every alert and change the DNS name. Is there anyway to change it once and have it change all the alerts?

An easy way you can do this is add into your "hosts" file the name of the old email server but the ip address of the new relay, this would save you from changing any alerts, this would also give you the flexibility to change it with ease in the future.

I don't know however what this does to relay stuff, the server that's allowing relay would have to use the ip address of the new server, not the DNS name (I think).
