If you want to watch for VM traffic between virtual hosts, then you need to setup netflow on the switch(s) that connect those hosts.
If you want to see VM traffic between VM's on the same host then it depends on what type of VMware licensing you have. VMware's enterprise/enterprise plus license allow for Distributed vswitches, which allow for netflow export.
