Monitor number of items in a mailbox folder

We've got an Exchange mailbox that messages get POPed out of and sometimes the process that does this stops working.  The best way I can think to monitor this is to monitor the inbox of the mailbox being POPed from and if there's more than 15 or 20 messages in there, send me an alert.  The wrinkle is that we're a little paranoid about whether or not the process doing the POPing is 100% accurate, so when an email hits the inbox, it gets immediately copied into another folder.  POP ignores the other folder so we always have a copy.  I see that there's a AppInsight For Exchange: Mailbox field for Total Emails Count, but that will look at the whole mailbox.  Any thoughts on how to restrict it to only look at the inbox?
