What is the best way to monitor a machine's drive mapping? We have a critical machine that sometimes reboots then doesn't connect back to the server drives.

To my knowledge this is an impossibility. Only logged in users see mapped drives, locally.
Services, such as the ipMonitorSrv service, cannot see mapped drives locally or remotely.
The only thing you could monitor that is remotely close to this is the availability of the UNC path (\\servername\sharename) being used by the mapped drive.
