Currently we are trying to update the record in a process. Example being onboarding. When they fill out the form in the Service Request we are trying to have it update the title of the request from "New Onboarding Request" to include information that was filled out in the form.
This does look like it is possible using Process > Update Record > Name. From there you have the option to "Add Variables" Which are the fields (variables) that were filled out in the form. Being able to Append the new users name and location would be huge, otherwise when 10+ new users are starting all the tickets have an identical title and it takes too long to sort through.
I've tested many different ways but the title never updates. When looking at the request in the agent view, if you go to the Process tab it just says "Error:wrong number of arguments (given 1, expected 0)"

As you're specifically wanting to just update the title of the request, I would suggest using the 'Custom Title' that's beneath your 'Catalog Title.'
Using that enables you to append those desired variables to manipulate the title - helping provide more clarity and context as you require. Once a user submits that request, in the above instance, the request's title will then appear as "New Hire: Jane Doe starts 10/12"
