How can I dive further with student account management within the Google admin console. We license our Chromebooks before issuing them to students but we want to know more about what they are doing with the Chromebooks. Any advice?

I'm not sure if you want to track user accounts or chromebook devices. I suppose that you want to extract users' traffic if you posted in NTA discussion. I'd suggest to group all these users in one IP group then. Another idea is to combine NTA with UDT module - then you may trace traffic on exact devices & users... somehow
