I notice than my NPM Syslog only stores log for the past 7 days. Can NPM store Juniper logs more than 7 days?

Yes, NPM Syslog can store syslog for more than 7 days. Go to Settings then Orion Polling Settings, under the Database Settings section you will see the value for Syslog retention. You can set this up to 5000 days (but be careful if you get a lot of logs because this could impact your database size). See the screenshot below.
Are you asking to store other logs for 7 days but keep only Juniper longer? If so, that will be more complex (you can create a rule to log or forward those logs from specific devices).
