Log API Activity

Currently only Web Console logins are logged in the AuditingEvents Table.

Could at least create an API_AuditingEvents table (or something the like) and put all activity in there.

I'm trying to isolate 12+ years of old accumulated "service" accounts and cannot tell which are active or inactive anymore.

YES. API activity needs this. Not just for service accounts, but a mix of troubleshooting and security events too.

I'd extend the above by having "types" of API activities monitored added to the audit trail - with possibly enable/disable functionality for each type.

What would be ideal would be to include the SWIS API call type (login, read, create, update, delete, invoke verb), the username, and the source IP/DNS.

Although the Audit Log does show Move/Add/Change/Delete things, I understand what you are requesting and think it's worthwhile. You get my +1.
