Using Service Catalog field value for email parameter in Notification Process

For our HR new hire onboarding process, we would like to send an automated email to the new hire to let them know their accounts and computer is ready to be picked up.  We have a 'Personal Email Address' as a required field in the service catalog form and would like to use that as a parameter in an email via the Notification option within the Process flow.  Is this possible, or has someone figured out an alternative solution to notify new hires?
